This is my favourite baked quesadillas recipe. These are crispy, delicious, and chock full of nutrition. 

Baking these quesadillas allows you to make many at once, so you can feed your hungry family quickly and easily.

These amazing baked spinach mushroom quesadillas are my family's weeknight dinner because I can have them on the table in less than 30 minutes, and the whole family loves them every time.

Baked Spinach Mushroom Quesadillas

Prep Time: 10 minutes
Cook Time: 15 minutes

Servings: 4

Ingredients

  • 8 ounces sliced mushrooms
  • 4 tortillas (8 inch)
  • 1 cup grated mozzarella, or vegan
  • 1 cup grated cheddar, or vegan
  • 5 ounces baby spinach

Instructions

  1. Preheat the oven to 200°C.
  2. Place the mushrooms in a microwave-safe bowl and microwave for 2 minutes to soften them. Drain the mushrooms and set aside.
  3. Place each tortilla on a baking tray, draping half over the edges so they all fit.
  4. Distribute about half of each of the cheeses over the portion of each tortilla that is on the baking tray. Then layer the spinach, followed by the mushrooms, and then the remaining cheese.
  5. Fold the other half of the tortillas over the top and lightly press down.
  6. Bake the tortillas for about 6 minutes, then flip each one over and bake for another 6 to 7 minutes, until the cheese is melted and the outside of the tortillas is browned.

Serve warm and enjoy.
